"30 Minutes or Less" I don't even think I made any changes to it.

Zucchini Caserole
Heat oven to 350
1 box Stove Top stuffing mix
butter or cooking spray
1 medium onion, chopped
2-3 small zucchini,diced
1 can cream of mushroom soup
1 cup cheddar cheese, grated
Prepare stuffing mix as directed on box. Melt butter in another saucepan or coat with cooking spray; add onion and zucchini. Saute until tender. Add soup and cheese; stir until cheese melts.
Pour mixture in sprayed baking dish and top with stuffing. Bake for 20 minutes.
So yummy. Got this from my mom. Her version calls for two boxes of stuffing mix, one on the bottom of the baking dish and one on the top. I think one is sufficient--less carbs--and it's easier to taste the zucchini this way. It is intended as a side dish but sometimes I put chopped cooked chicken in the zucchini mix and then its a main dish too.

This recipe came to me in the mail from....somewhere. The original had no veggies or seasonings. I like it better this way. More balanced.
