1-1/2 C steamed, mashed sweet potatoes
2 C flour
1 T baking powder
1/2 t salt
1 C milk
1/4 C brown sugar
1/4 C melted butter
1 T grated orange rind
3 eggs
Sift dry ingredients together, set aside. In another bowl combine potatoes, milk, sugar, butter, and orange rind. Stir flour mix into potato mix to combine--don't over mix. In small bowl beat eggs and then gently fold them into the batter until combined. Spoon batter onto hot waffle iron and cook until just slightly brown. Serve with toasted pecans and maple syrup.
I like to make double or triple batches and then freeze our leftovers. I defrost them for a few seconds in the microwave and then pop them in the toaster.
This recipe comes from Mr. Alton Brown. The only thing I changed was the eggs. I like the texture the whole eggs add instead of the egg whites in his.
